Pedro Ximénez grape. From a very special cask. Produced in Córdoba, where this variety finds its ideal habitat, far from humidity, and transforms a raisined must into the best sweet wine in the world. A dessert in itself. A perfect way to end a meal. It pairs perfectly with desserts that are not too sweet.
Jet black, with iodine in the top layer and slow movement in the glass.
Very intense, with toasted and eucalyptus aromas contrasting with other primary aromas such as figs, plums and raisins.
Very sweet but not cloying, balanced with acidity and perfectly integrated alcohol. Very persistent on the palate with aromas of dates and toffee in the aftertaste. A majestic wine.
Cakes, ice cream, mousses, jams… Serve chilled, between 12 and 14ºC, in a traditional wine glass, if it is large, or in a white wine glass.
Very round on the palate, with a very sweet attack, though not cloying, finding a masterful balance with the acidity and bitterness of the polyphenols from the stems. Very persistent on the palate with aromas of dates and toffee on the finish. A majestic wine.
